Einkorn Pancakes Recipe

You're gonna love these Einkorn pancakes. They are so light and fluffy and made with all-purpose einkorn flour from Einkorn.com. Einkorn flour works and tastes a lot the same as the all-purpose flour you typically buy at the store, however it is an ancient grain that is much easier for us to digest.

Since it doesn't have as much gluten as regular flour, it takes a little longer to absorb liquids so you will need to let the batter sit for about 10 minutes before you cook the pancakes. Just make the batter up as you would with normal pancakes, let it sit for 10 minutes, and then quickly stir it again before you cook the einkorn pancakes.

This buttermilk pancake recipe is also great to use to make sourdough discard pancakes. Just add 1-2 tablespoons of discard sourdough to the batter and you'll be amazed by the flavor.

Einkorn Flour Pancakes Ingredients

  • All-Purpose Einkorn Flour - you can order Einkorn flour online. It's an ancient grain that isn't gluten-free, but is easier on our digestive systems so is often suitable for those with a gluten intolerance.
  • Sugar - this recipe calls for white granulated sugar.
  • Baking Powder and Baking Soda - these help keep the pancakes super light and fluffy.
  • Salt - sea salt works great.
  • Butter- you can use salted or unsalted butter, depending on what you typically use in your pancakes. It should be melted before mixing into the batter.
  • Buttermilk - you may need to add a little more or less depending on how fluffy or thin you like your pancakes to be.
  • Eggs - any kind of large eggs will work great.

How to Make Buttermilk Einkorn Pancakes

  1. Mix the dry ingredients. In a medium-sized mixing bowl, combine the einkorn flour, sugar, baking soda, baking powder, and salt. Mix with a whisk making sure all the "dry" ingredients get mixed in.
  2. Combine the wet ingredients. With another mixing bowl, combine the melted butter, buttermilk, and eggs. Whisk until all the ingredients are combined.Add the buttermilk mixture into the flour mixture and stir until well mixed, but leave some lumps. Do not overmix.
  3. Rest the batter. Let the batter sit for 10 minutes, then add a little more buttermilk if you want thinner pancakes. (The Einkorn flour takes a little longer to absorb the flour than regular all-purpose flour so the batter will become thicker during the 10 minutes)
  4. Cook the pancakes. Heat a pan or griddle over medium heat, then spray with nonstick cooking spray.Pour about ½ cup of batter onto your hot griddle at a time. Cook the pancakes until there are bubbles popping on top and the underside is golden brown. Flip the pancake over with a spatula and cook the other side until the buttermilk einkorn pancake is golden brown.
  5. Serve. Continue until all batter has been cooked, then serve with your favorite syrup, butter, or jam. Enjoy!

So I have a love/hate relationship with pancakes, especially in the past when I had to use gluten-free flour blends, they were the worst! And no matter how hard I tried they would come out thick and dry and crumbly. Those were the “dark ages” in my baking life. Then my family started to use enkorn and I found your recipe, and let me just say I will never ever use another pancake recipe in my life! They are seriously the best pancakes I have ever had! I think what caught my attention was the perfect balance of acid and sugar, not to mention the fluffy light texture. Thanks so much for the recipe, it has made me love pancakes again!

Holy Cow!!! These are seriously THE BEST PANCAKES I’ve ever had. Incredible. I used cultured buttermilk that our Whole Foods carries. I’m interested to see how these will be with homemade buttermilk from milk and lemon juice.

Made one change...I separated the egg yolks and the whites adding the yolks with the buttermilk and melted butter to the dry ingredients. I whipped the egg whites to soft peaks and folded them into the pancake batter. Very light and fluffy. Delish.

FAQs

Can I replace all-purpose flour with einkorn flour? ›

Einkorn Flour absorbs less water and at a much slower pace than all purpose flour. Because of this, a great conversion rate in recipes is to use an extra 1/4 cup of einkorn for every 1 cup of all purpose.

Why is my einkorn dough so sticky? ›

While einkorn is high in protein, its gluten properties aren't the same as modern wheat. This results in a dough that can be overly sticky and wet by the end of bulk fermentation.

Do you knead einkorn dough? ›

All einkorn bread doughs are basically no-knead, because excessive kneading does not help develop einkorn's gluten. Avoid using a standing mixer to knead einkorn bread dough.

Why is my einkorn bread so dense? ›

If your bread dough mixes up at a normal texture because you add more flour to lessen its sticky texture, your dough will end up drying up and baking dense later because einkorn absorbs liquids much slower than regular wheat.

Does einkorn flour go rancid? ›

Whole Einkorn can be stored up to a year in the freezer or up to 6 months in the pantry. Einkorn flour is best stored in the freezer and will last up to 6 months. If the grains or flour have a rancid smell when you open the bag, toss and buy fresh.

Why does einkorn not work for baking as well as modern wheat? ›

Yeasted einkorn dough doesn't rise like modern wheat dough.

This is particularly true with einkorn bread. Don't expect big, fluffy dough during the initial rise. Yeasted einkorn dough does not double in size like modern wheat yeasted dough. This can also be expected when baking the dough.

What is so special about einkorn flour? ›

Besides being tasty, einkorn flour offers a number of health benefits. Easier to Digest Einkorn flour has roughly 30% more protein and 30% less starch than flour made from modern wheat. It also contains less gluten than modern wheat cultivars that were developed in the 20th century.

Should you sift einkorn flour? ›

Sifting makes the einkorn flour much easier to mix into the other ingredients without lumps forming. This is especially important for einkorn flour because it is slower to absorb the liquids in the recipe than regular all-purpose flour and you can end up with dry flour clumps if not careful.

Is spelt the same as einkorn? ›

Although einkorn and spelt are both varieties of wheat, they have very different levels of gluten. Spelt has significantly more gluten than einkorn, making it a superb healthy alternative for those with no trouble digesting gluten and who are looking for that rise and spring in their baking.

How to sub einkorn for regular flour? ›

#1 You can substitute Einkorn flour one-to-one for regular WHOLE WHEAT flour in most recipes (although you may need to reduce the liquid by up to about 15%…more about liquid in #2).

Why isn't my einkorn sourdough bread rising? ›

It generally means that your starter is not strong, and you didn't let the bread rise enough. There are two rises, the first and second. The dough should dome on the first rise, but don't let it overproof or it won't have the strength to rise again.

Is einkorn flour good for sourdough? ›

Only four ingredients - all-purpose einkorn flour, salt, water and a sourdough starter are all you need for healthy, naturally-leavened bread. With this recipe you can mix the dough and bake the bread on the same day! If you've never baked with einkorn flour, you are in for a real treat.

What is the best flour to replace all-purpose flour with? ›

Either cake flour or pastry flour can be used as a 1:1 substitute for all-purpose flour in most baking recipes. Steer away from cake flour for chewy bread baking, though, and opt instead for bread or whole-wheat flour for your no-knead and sourdough loaves.

Is einkorn flour healthier than all-purpose flour? ›

Einkorn wheat is an ancient wheat grain that's healthier than modern wheat. That's partly due to its much lower gluten content. It's not gluten-free, but it is lower in gluten and possibly easier on the digestive system than traditional wheat flour.

Does einkorn flour need to be soaked? ›

Einkorn flour acts somewhat like any wheat flour. The main difference is the amount of gluten in einkorn flour is less than what is in regular wheat flour. Because Einkorn flour has less gluten, the flour to water ratio is not the same. Einkorn flour needs more soaking time in the water and less kneading.

Should einkorn flour be sifted before measuring? ›

Si t your packaged einkorn lour through a fine sieve or lour si ter before measuring. Just like with all flours, sifting packaged einkorn flour will give you a much more accurate measurment.
